Stuffed Mushrooms 🍄 w/ Quinoa 🍚

9 Baby portabello mushrooms

1/8 cup finely chopped zucchini

1/8 cup cooked black beans

¼ cup cooked quinoa

1/8 cup shredded vegan cheese

 Dash Himalayan Pink Salt

Dash black pepper

 

  1. Wash portabellos thoroughly. De-stem and mince the stems to add for stuffing.
  2. Add portabello stems, cheese, salt, zucchini, black beans, black pepper and quinoa to mixing bowl.
  3. Fill portabellos with stuffing. Place in the air fryer for 8 minutes at 400 degrees.
