Vegan Lobster Rolls:
Ingredients:
1 can of Whole Hearts of Palm
1 tbsp Lemon juice
½ Red Bell Pepper
1 Celery Stalk
1 tbsp Paprika Powder
¼ cup chopped scallions
4 cups of Vegan Cream Cheese
1 tsp Himalayan Pink Salt
1 Nori Sheet
- Drain the can of Whole Hearts of Palm and rinse under cold water. Cut Hearts of Palm into thin strips. Place Hearts of Palm in a mixing bowl.
- Finely mince the red bell pepper, celery, nori sheet and scallions. Add paprika powder, lemon juice and Himalayan pink salt.
- Combine all ingredients to mixing bowl with vegan cream cheese.
Optional Garnish: Alfalfa sprouts
Serve on toasted gluten free rolls. Enjoy!
